Camp Internet's Seed Project, Growing Carrots

Carrots are very versatile, they can grow almost anywhere in partial-to-shady sun light, cool or warm weather, and they take 65-73 days to mature from seed.
If you want straight smooth carrots be sure to grow them in soil that doesn't have any rocks in it.
Carrots are a good source of Vitamin A which keeps your eyes healthy and helps you to see at night.

Once you have grown your carrots try making this easy cool-weather soup.

Chilled Carrot Soup

Ingredients:
1 pound (about 5 large) carrots
1 cup boiling water
1 cup vegetable broth
1 tablespoon butter
1 teaspoon salt
3/4 cup plain yougurt

Directions:
1} Wash carrots and slice them into 1/4 inch thick rounds.
2} Steam carrots in an inch or two of water until soft, about 10 minutes.
3} Put the carrots, broth and salt into a blender, blend until smooth.
4} Put soup into a bowl and mix in the yogurt.
5} Cover the bowl with foil or plastic wrap and chill.
Serves 3-4
