Carrots



This vegetable is tasty both cooked and raw, and easily resists cold. Carrots grow well in a small area, and if stored under cool, moist conditions, can stay fresh for three or more months.
-Planting: You must prepare the soil deeply, and all clumps, sticks, stones, and other debris should be removed to prevent roots from becoming misshapen. Carrot seeds can be sewn 2-4 weeks before the last expected frost. The seeds should be planted as shallow as possible, about ½ an inch deep, in rows 12-15 inches apart. Harvest may be prolonged by sewing seeds continuously every two or three weeks until midsummer.
-Growing: Carrots should be thinned immediately after sprouting, because it becomes more difficult as the season passes. When first thinned, the seedlings should stand 3 inches apart, and eventually be thinned to 6 inches apart.
-Harvesting: Carrots taste best when they are grown quickly, and are harvested young. They should be picked when the tops of the roots are about ½ an inch in diameter.
